All this is so yummy - and good for you - that I wanted to share!
Fruit Pasta Salad (makes 13 servings) 1/2 cup serving = 90 calories, 0 fat
1 1/2 cups uncooked pasta (I use the spiral kind) 1 can (8 oz) pineapple chunks in juice 1 carton (8 oz) non fat peach yogurt 2 tbs non fat sour cream 1 1/2 cups cubed cantaloupe 1 cup grapes, halved (I use a combo of green and red) 1 1/2 cups strawberries
Cook pasta. Rinse with cold water and drain. Drain pineapples, but save 2 tbs of juice. In a separate bowl, combine yogurt, sour cream, and 2 tbs. of pineapple juice. Mix all together in a big bowl and enjoy!
Do you think it is absolutely necessary to use (bleah) pineapple juice??? I can't stand pineapple juice, if I ruled the world it would be illegal! Seriously, would orange juice work?
I'm sure OJ would work fine. I too hate pineapple juice and you really can't even taste it. I don't put the pineapples into the salad cause I don't like them.
