Oven Fried Chicken (makes 4 servings) 1 serving = 5 WW points (I'm not sure of the nutritional content!)
1/4 cup plain breadcrumbs 1 tbsp grated parmesan cheese 1 tsp paprika 1 tsp dried thyme 1/2 tsp garlic salt 1/4 tsp ground red pepper 1/3 cup buttermilk (I just use regular 1% milk) 20 oz uncooked chicken (breasts or strips work) Cooking spray
Preheat oven to 400 F. Combine breadcrumbs, parmesan, and spices in a shallow dish. Place milk in a separate dish. Dip the chicken into the milk and then dredge in breadcrumb mixture. Spray cookie sheet with cooking spray (I also use aluminum foil so it doesn't get all gross on the pan) and place chicken on pan. Cook for 40-50 minutes or until cooked through.
