Couscous with Sweet Corn


This recipe ROCKS!


Couscous with Sweet Corn (makes 4-6 servings)


Ingredients:


1 ½ cups vegetable stock


1 cup couscous


1 ½ cups corn


1 cup chopped Italian tomatoes


2 cloves garlic, minced


1 tsp chili powder


¼ tsp ground cinnamon


2 tbsp snipped chives


1 tbsp lemon juice


 


 


Directions:


Boil stock. Add couscous. Cover pan & remove from heat. Let stand 5 minutes. Fluff with fork.


 


In frying pan, combine corn, tomatoes, garlic, chili powder, and cinnamon. Cook until liquid from tomatoes evaporates (about 5-10 minutes). Stir in chives & lemon juice.


 


Add couscous & stir to combine.

hmm I might have to try this.  It sounds good. What kind of corn did you use? Canned? Frozen? Does it matter?

I used canned (drained). I bet you could use frozen too though.

hmm I might have to try this out. Just out of stupidity... when you are making this do you stir it every now and then to make sure it doesn't stick? I ask because I just made some sun dried tomato risutto and the instructions said not to stir it but to leave it alone and it burned and stuck to the pot.

you cook the couscous by itself and you don't need to really stir that. I do stir the veges and stuff in the frying pan for sure.
